1923 New Orleans was a spicy stew of culture, ethnicity, and cuisine, all of which served to cook up a hot new sound of Jazz.

And on a hot New Orleans day the legend of Louisiana’s Crystal Hot Sauce was born, Alvin and Mildred Baumer produced the first bottle of Crystal Hot Sauce at the plant on Tchoupitoulas Street in New Orleans.

Today Alvin and Mildred’s son, Alvin A. Baumer, Jr., carries on the business.


THE PLANT ON TULANE AND CARROLLTON AVENUE.


The 1940s - Baumer Foods business expanded rapidly as fans of hot sauce discover the unique flavor of Crystal. To accommodate their growing business a plant on Tulane Avenue at Carrollton Avenue becomes the new home of Baumer Foods.


The new plant sports a sign that was destined to become a famous New Orleans iconic landmark.


Hurricane Katrina
On Monday, August 29, 2005, at 8:14 a.m., Hurricane Katrina roared ashore with sustained winds of more than 125 miles per hour.

The Tulane and Carrollton Avenue plant, and the original sign, were irreparably damaged. 

New Orleans Flooded

Breached levees and flood walls allowed tens of billions of gallons of water to pour into New Orleans and surrounding areas. In some places more than 10 feet of water submerged homes and businesses. Many lives were also lost to Katrina’s fury.

A stain, that New Orleanians know all too well, marks the high water level on the entrance door to the Baumer Foods plant.


ICONIC SIGN RETURNS


In January 2010 a faithfully reproduced replica of the original sign was installed on the roof of The Preserve Apartments, located on the site of the original Baumer Foods plant on Tulane Avenue.


Baumer Foods established a new plant up river from New Orleans in St. John the Baptist Parish, at a site that is nine feet above sea level.

CRYSTAL HOT SAUCE - AN INTERNATIONAL FAVORITE

Every year over 3.2 million gallons of hot sauce are shipped out of the Louisiana plant to destinations domestically and in over 28 countries across the world.


While hot sauce is the heart of Baumer Foods, the company also boasts a taste-driven product line - Crystal Original and Crystal Extra Hot Sauce(three times hotter, just as flavorful);
