Collard Greens

Total Time55 minsYields6 Servings
Sometimes all you need is a big pot of greens. (Like after Mardi Gras when all you’ve consumed is king cake.) That’s where these hearty collard greens come in. They’ll have you feeling like you’re back at home with your mom in the kitchen.
 1 tbsp butter
 8 slices bacon(chopped)
 1 small onion(finely diced)
 1 lb collard greens
 2 cloves garlic
 1 ¼ cups chicken broth
2 tbsp Crystal Hot Sauce with Garlic
salt and freshly ground pepper to taste

Wash greens: Using a sharp knife, cut out the woody stems and cut greens into pieces, about 3/4" wide.

Cook chopped bacon and butter over medium heat until crisp. Pull out a few pieces and set aside for garnish.

Add onions to bacon grease and cook until softened (about 3-5 minutes).

Add greens and garlic. Cook until slightly wilted, about 3-4 minutes.

Add broth and Crystal Hot Sauce, cover and let simmer on low for 35-40 minutes (until tender).

Add salt and pepper to taste. Garnish with bacon pieces and serve.
